We never need an excuse to indulge in pancakes, but since it’s Shrove Tuesday today, we thought we’d whip up something a little special!

Instead of your traditional pancakes however, these beauties can be whipped up in your muffin-tin, making them the perfect bite-sized treat. What’s even better is that they literally contain five ingredients so they’re super simple, super quick and super delicious to boot.

Whether you enjoy sweet or savoury toppings too, we’ve got you covered! Serve with fresh blueberries, ricotta and cinnamon for a sweet treat, or opt for crispy bacon, spinach and feta if savoury’s more your jam. Just try not to eat the whole tray at once!
