This breakfast hack is the ultimate time saver. So, if you’ve slept through your alarm (and pressed snooze a few times more than usual), this two-minute banana bread in a mug is a tasty and super easy way to get back on track!

Servings: 1
Preparation: 2 mins
Cooking: 2 mins

Ingredients

  • 1/2 banana, mashed.
  • 1/4 cup almond milk.
  • 1/4 cup almond meal.
  • 1 teaspoon cinnamon.
  • 1/4 teaspoon baking powder.

To Serve

  • 1 tablespoon walnuts.
  • 1/4 cup yoghurt (optional).

Directions

1. Mash banana in the mug and stir in almond milk until combined. Add in almond meal, cinnamon and baking powder and stir until just combined, do not over mix. Microwave on high for 2 minutes and top with walnuts and a dollop of yoghurt for a complete brekkie.

Note

This muggin will rise so make sure to use a mug with rising room

We used a 1000w microwave, if your microwave is less powerful, it will require a bit more cooking time.
