Chia Peaches + Cream Popsicles

I Quit Sugar recipe - Chia Peaches + Cream Pops

Fruity, good for your gut, low in fructose and full of good fats. These Chia Peaches + Cream Pops really have it all!

Preparation: 4 hours 10 mins

Ingredients

  • 1 cup coconut milk.
  • 1 tablespoon rice malt syrup.
  • 1 teaspoon vanilla extract.
  • 1/4 cup cashews, soaked in water overnight, drained and rinsed.
  • 3 teaspoons chia seeds.
  • pinch of sea salt.
  • 1 large peach, pip removed and roughly chopped.

Directions

1. Drop peach pieces into an 8-hole popsicle mold. Don’t push them down if you want the peach pieces to be throughout the popsicle.

2. Blend the coconut milk, rice malt syrup, cashews, vanilla, chia seeds, sea salt and 1/4 cup of water together in a blender. Pour into the popsicle molds until full.

3. Place in sticks, then freeze for 4 hours or overnight.
