Lemon Coconut Cookies with Chocolate Drizzle

It’s no secret that we love ourselves some coconut here at I Quit Sugar. So we’ve made these Lemon Coconut Cookies with desiccated coconut and Coconut Revolution’s Coconut Oil, yummo!

Ingredients

  • 1 cup brown rice flour.
  • 1/4 cup Coconut Revolution Coconut Oil, melted.
  • 2 tablespoons rice malt syrup.
  • 1/3 cup desiccated unsweetened coconut.
  • 2 tablespoons lemon juice + zest from 1/2 a lemon.
  • 1/2 teaspoon vanilla powder.
  • 1/2 teaspoon baking soda.
  • pinch of sea salt.
  • 25g 85 per cent dark chocolate, melted.

Directions

1. Preheat oven to 180ºC / 350ºF / Gas Mark 4 and line a baking tray with baking paper.

2. Add all ingredients besides the dark chocolate into a mixing bowl and combine with your hands. Mould the mixture into 12 -15 equal sized cookies and place on the baking tray.

3. Place in the oven and bake for 15 minutes until lightly golden.

4. Once cooked, remove cookies from the oven and drizzle with melted chocolate. Serve immediately.
