Paleo Peach Crumble

“But there’s fruit in that!” we hear you cry. Contrary to popular belief, we do eat fruit here at IQS. But we eat it when it’s in season, and always pair it with a source of fat and protein to keep sugar levels kosher.

Our friends, The Merrymaker Sisters have created the perfect fruity dessert. With juicy peaches, naturally sweet vanilla and good fats from coconut and nuts, this dessert is definitely IQS friendly.

Ingredients

  • 6 peaches, sliced.
  • 1 1/2 cup shredded coconut.
  • 1 cup walnuts, roughly chopped.
  • 1 lemon, juiced.
  • 1/4 cup coconut oil or ghee melted.
  • 1 teaspoon natural vanilla powder.
  • pinch of sea salt.

Directions

1. Preheat oven to 180 degrees celcius.

2. Place the peach slices in a baking dish, slightly overlapping each other and covering the entire base. Pour the lemon juice over the peaches and leave.

3. Meanwhile, in a bowl combine the shredded coconut, walnuts, vanilla and salt. Add the melted coconut oil to the dry ingredients and mix until crumbly.
Sprinkle the crumble mix evenly on top of the peaches.

4. Place in to the oven for 10 minutes. Cover with foil and cook for another 15 minutes.
