You know how Christmas cakes start coming out in stores sometime around July? And how, after months of sitting in the back of your pantry, it’s still perfectly safe to eat?

That’s because your average Christmas cake is stuffed with enough sugar and booze to keep it preserved until the end of times. Which makes it great food for preppers, but not for those trying to keep a lid on our sugar intake.

This Totally Messed-With Christmas Cake from I Quit Sugar: Simplicious is your low-fructose solution. We’ve swapped out the dried fruit for beetroot (weird, but delicious) and orange zest, while amping up the spices to make it super fragrant. And yes, there’s a splash or two of brandy in there, too.

It’s also a super easy recipe, so you can make it right there on the day as you’re basting the turkey (we recommend serving straight out of the oven, dripping in fresh cream). Perfect if you don’t fancy a cake full of the sweet stuff!
