This lemon and lavender shortbread is rich and buttery – the perfect little treat when you feel like something sweet!
150 g unsalted butter, softened.
1 tablespoon granulated stevia.
2 teaspoons vanilla extract.
1 teaspoon lemon rind.
1 1/2 cup plain flour.
5 drops lavender essence.
3 tablespoons lemon juice.
1/4 cup coconut butter, melted, to serve (optional).
Preheat oven to 150°C/300°F/Gas Mark 2 and line a large tray with baking paper.
