1 cup almond meal
1/3 cup coconut oil
1 cup desiccated coconut, plus extra for rolling
1/2 cup vanilla protein powder
2 tablespoons cashew or almond butter
Juice and zest of 1 lemon
Place all ingredients in a food processor and process until mixture comes together. If too wet add more coconut, if too dry add more cashew butter.
Shape into balls and roll in extra coconut. Place in fridge for at least 30 minutes. Store balls in the fridge or freezer for up to two weeks.
We prefer to use whey, but you can use pea or rice protein powder. If you're on Weeks 2-5 of the Program, use a plain protein powder and add 1/2 teaspoon of vanilla powder or extract.

Hey Elizabeth, great question – it will depend on the type of protein powder you use and the amount of protein in it – as generally (though it will depend on the individual child’s weight and height) children ages 4 to 18 require 0.45 to 0.95 grams of protein per day, and the use of protein powder should not exceed this amount, so just be sure to measure their overall intake before giving them these and deciding how many to give them.
