2bananas, very ripe
1 cup rolled oats
1/2 teaspoon cinnamon, ground
1/2 teaspoon vanilla bean powder
1/4 cup shredded coconut
1 tablespoon cacao nibs
Place bananas into a mixing bowl and mash into a smooth puree with a fork. Fold through rolled oats. Here is where you’d stir through any optional add-ins. Our favourite combo is cinnamon, vanilla and cacao nibs.
Scoop up 1 heaped tablespoon of mixture and place onto the prepared baking tray, flatten out (you can lightly brush with melted butter here to help the cookies crisp up, however this isn't necessary). Place into the oven and bake for 15 minutes. Once cooked, remove cookies and place onto a wire rack to cool.
