Molten Peanut Butter and Jelly Brownies

Brownies are the ultimate dessert – they work as a comfort food AND celebration food. And isn't that what Mother's Day is all about? Showing your mom how much she means to you and making her feel appreciated. But she might not feel so appreciated when that sugar crash hits! That’s why we’re sharing this wholesome alternative, an IQS-ified take on the classic chocolate brownie. It’s got all of the flavour and none of the added nasties!   • Coconut oil, butter or ghee for greasing
  • 1 1/2 cups almond meal
  • 1/4 cup raw cacao powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/2 cup unsalted butter, melted
  • 1/4 cup rice malt syrup, melted
  • 3 eggs, lightly whisked
  • 1/3 cup crunchy peanut butter
  • 1/2 cup raspberries, mashed with a fork

Directions

  1. Preheat the oven to 160°C. Line a 9x9 inch lamington/brownie tin with baking paper.
  2. In a large bowl combine all of the ingredients, except for the peanut butter and raspberries, until smooth.
  3. Pour the batter into the lined cake tin. Dollop peanut butter into mixture and use a skewer or knife to create a swirl pattern. Repeat the process with mashed raspberries.
  4. Cook for 20-23 minutes, checking at 15 minutes to ensure mixture is not burning. Brownies are cooked when top is slightly firm to the touch. You want them to be gooey so try not to overcook.
  5. Allow brownies to cool for 10 minutes before removing from the pan and slicing.

Lemon Meringue Pie

Ingredients:

  • For the Crust:
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1 tsp vanilla extract
  • Pinch of salt
  • For the Filling:
  • 1 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup rice malt syrup
  • 1/4 cup cornstarch
  • 1/4 cup coconut oil
  • 3 egg yolks
  • For the Meringue:
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • ⅓ cup rice malt syrup 

Method:

  1. Preheat your oven to 180°C (350°F) and grease a 9-inch pie dish. To make the crust, combine the almond flour, coconut flour, melted coconut oil, egg, vanilla extract, and salt in a bowl.
  2. Mix until a dough forms. Press the dough into the bottom and up the sides of the prepared pie dish. Prick the crust all over with a fork.
  3. Bake the crust for 10-12 minutes, or until lightly browned. Remove from the oven and let cool. In a saucepan, combine the lemon juice, lemon zest, rice malt syrup, cornstarch, coconut oil, and egg yolks. Whisk until smooth. Cook the mixture over medium heat, whisking constantly, until it thickens and comes to a boil. Pour the lemon filling into the cooled crust and smooth the top.
  4. To make the meringue, beat the egg whites and cream of tartar in a mixing bowl until frothy. Gradually add the rice malt syrup, beating continuously, until stiff peaks form. Spoon the meringue over the lemon filling, spreading it out to the edges of the crust.
  5. Bake the pie for 10-12 minutes, or until the meringue is lightly browned. Remove the pie from the oven and let it cool to room temperature.
  6. Once the pie has cooled, chill it in the refrigerator for at least 2 hours, or until set. Serve and enjoy your delicious sugar-free lemon meringue pie!
  7. Note: Store any leftovers in the refrigerator for up to 3-4 days.

Choc Almond Slice

This nostalgic dessert will bring a smile to your mum’s face. It's quick and easy to make, plus it's loaded with flavour. This recipe is from our Budget Family Meals cookbook, so if you’re after more tasty treats like this one, get your copy HERE.

 

Ingredients:

  • ½ cup Dark Chocolate Chips
  • 1 tbsp (20ml) Coconut Oil
  • 1/3 cup Almond Butter
  • 2 tbsp (40ml) Sweetener of Choice (we used Rice Malt Syrup)
  • ¼ cup Almond Flakes
  • 1 cup Brown Rice Puffs

Method:

  1. Heat a saucepan with some water in it to the boil. Add the chocolate and coconut oil in a heat proof bowl and place on top of the saucepan, without the water touching the bowl. Heat until melted.
  2. Stir through almond butter and sweetener. Take off the heat. Stir through almond flakes and brown rice puffs until combined.
  3. Spoon into a loaf tin or container and leave to set in the fridge for at least one hour. Keep refrigerated.
