This smoothie is not only visually stunning with its vibrant pink colour, but it's also packed with tropical flavours and nutrients from the dragonfruit and coconut milk. It's perfect for a refreshing breakfast or snack on a warm day, and it's sure to impress with its unique taste and appearance.  

Ingredients:

  • 1 ripe dragonfruit, peeled and diced
  • 1/2 cup coconut milk (you can use either canned coconut milk or coconut milk beverage)
  • 1/2 cup plain Greek yogurt (or dairy-free yogurt for a vegan option)
  • 1/2 cup blueberries
  • Juice of 1/2 lime
  • 1/2 teaspoon vanilla extract
  • 1 cup ice cubes
  • Additional toppings (optional): shredded coconut, sliced dragonfruit, mint leaves

Instructions:

  1. Prepare the dragonfruit by cutting it in half and scooping out the flesh. Cut the flesh into chunks and set aside.
  2. In a blender, combine the diced dragonfruit, coconut milk, Greek yogurt, blueberries
  3. lime juice, and vanilla extract.
  4. Add the ice cubes to the blender.
  5. Blend on high speed until smooth and creamy, stopping to scrape down the sides of the blender if needed.
  6. Taste the smoothie and adjust the sweetness or tanginess by adding more honey, lime juice, or vanilla extract as desired.
  7. Once you've achieved your desired consistency and flavour, pour the smoothie into glasses.
  8. If desired, garnish with additional toppings such as shredded coconut, sliced dragonfruit, or mint leaves.
