Flaxseed Berry Ricotta Muffins
- 1 cup all-purpose flour
- 1/2 cup ground flaxseeds
- 1/2 cup whole wheat flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup ricotta cheese
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil or vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mixed berries (blueberries, raspberries, or diced strawberries)
- Zest of one lemon (optional, for added flavour)
- Preheat your oven to 350°F or 175°C. Line a muffin tin with paper liners or grease the cups.
- In a large bowl, whisk together the all-purpose flour, ground flaxseeds, whole wheat flour, baking powder, baking soda, and salt. Ensure the dry ingredients are well combined.
- In a separate bowl, whisk together the ricotta cheese, honey or maple syrup, melted coconut oil or vegetable oil, eggs, and vanilla extract. If desired, add the lemon zest for a hint of citrus flavour.
- Add the wet ingredients to the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the mixed berries into the batter. Save a few berries for topping the muffins.
- Spoon the batter into the prepared muffin cups, filling each cup about two-thirds full. Top each muffin with a couple of reserved berries.
- Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the centre of a muffin comes out clean. The tops should be golden brown.
- Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
