From taking advantage of leftovers to simple meal prep techniques, we’ll be sharing a number of tips and tricks to saving money and staying healthy during the festive season. Summer Rolls
Serves 8
Ingredients:
- 1 garlic clove, minced
- juice of half a lime
- 2 chicken thighs
- 2 teaspoons coconut oil
- 8 x 22cm rice paper rounds
- 8 leaves of kale or lettuce
- 1 capsicum, sliced into thin lengths
- 1 cucumber, sliced into thin lengths
- 1/4 red onion, thinly sliced, optional
- small handful of alfalfa sprouts, optional
- 1 tablespoon tamari or soy sauce
- 2 teaspoons rice malt syrup
Method:
- Combine tamari, rice malt syrup, garlic and lime juice in a bowl. Add chicken thighs and coat in sauce.
- Heat oil in a frypan on a medium heat. Cook chicken thighs for 5 minutes on each side or until cooked through. Transfer to a plate and allow to cool before slicing chicken into strips.
- To make the Sweet Dipping Sauce combine all of the sauce ingredients in a jar and shake well.
- Have all of the remaining ingredients ready in a line. Place one rice paper round in a medium bowl of lukewarm water for 15 seconds or until just soft. Place on a clean, damp tea towel or paper towel.
- Lay kale or a lettuce leaf in centre of rice paper roll. Top with a little bit of chicken, capsicum, cucumber, onion and alfalfa sprouts. Fold ends in and roll up firmly to enclose filling. Repeat with remaining rice paper rounds and filling. Serve with sauce.
Brussels Sprout Salad with Quinoa
Here is Sarah Glover’s flavour-packed salad with perfectly-grilled Brussels sprouts and a combination of aromatic spices to lift your entertaining game.
Serves 6
Ingredients:
- 2 cups Brussel sprouts,
- trimmed and halved lengthways
- 1 red onion, cut into thin wedges
- olive oil, for drizzling
- sea salt and freshly ground black pepper
- juice of 1 lemon
- bunch of kale, leaves stripped and thinly sliced
- 1 cup quinoa, rinsed and cooked
- 1 tablespoon harissa paste
- 1/2 cup feta
- 2 tablespoons sliced roasted almonds
- bunch of flat-leaf parsley, stems and leaves roughly chopped
Method:
- Preheat a barbecue grill on medium.
- Place the Brussels sprouts and onion in a bowl, drizzle with olive oil, harissa paste and season with salt and pepper. Toss to combine, then spread the vegetables on the barbecue grill and cook, turning occasionally, for 15 minutes or until lightly charred. Remove from the barbecue and set aside.
- Meanwhile, combine half the lemon juice, a drizzle of olive oil and a little salt and pepper in a large bowl. Add the kale and toss to coat, then set aside to marinate.
- Heat a drizzle of olive oil in a saucepan over medium–high heat. Add the quinoa, season to taste with salt and pepper and cook for 5 minutes until it warms through and is a little toasted.
- Add the quinoa, barbecued vegetables, feta, remaining lemon juice and 1 tablespoon of olive oil to the kale. Stir to combine and season with salt and pepper to taste. Scatter the salad with the almonds and parsley and serve.
Espresso Martini
The name's Bond, James Bond. While the iconic secret service agent usually misses out on the coffee hit, we think it makes the best partner for your classic martini! This cocktail will impress all your guests – and there’s more where that came from.
Serves 1
Ingredients:
- 45ml vodka or tequila
- 1 teaspoon rice malt syrup, mixed with 1/2 teaspoon hot water
- 30ml cold press coffee
- wattleseed, ground, to serve
Method:
- Shake all ingredients in a chilled cocktail shaker.
- Double strain into a martini glass. Top with ground wattleseed.
