Healthy Collagen Panna Cotta

 

Ingredients: 

For the Panna Cotta:

  • 2 cups of unsweetened coconut milk (or any milk of your choice)
  • 1 teaspoon of pure vanilla extract
  • 2 teaspoons of unflavoured collagen powder (marine or bovine, as per your preference)
  • 2 teaspoons of agar-agar powder (a plant-based alternative to gelatin)

For the Berry Topping:

  • 1 cup of mixed berries (strawberries, blueberries, raspberries)

Method: 

  1. In a saucepan, whisk together the coconut milk, and vanilla extract. Warm the mixture over medium heat until it's steaming but not boiling.
  2. Sprinkle the collagen powder and agar-agar powder over the warmed mixture while whisking continuously. Continue to heat and whisk for about 5-7 minutes, or until the powders are completely dissolved, and the mixture begins to thicken slightly.
  3. Remove the saucepan from the heat and let it cool for a few minutes.
  4. Pour the mixture into your preferred panna cotta moulds or serving glasses.
  5. Allow the panna cotta to cool to room temperature, then cover and refrigerate for at least 4 hours or until it's set.
  6. Once the panna cotta has set, spoon the berries over the top.
