  • 3 eggs
  • 1/2 cup shredded carrot
  • 1/2 cup shredded zucchini
  • 1/4 cup kimchi, chopped
  • Salt and pepper to taste
  • Sesame oil for cooking
  • Green onions for garnish (optional)


  1. In a bowl, whisk the eggs and season with salt and pepper.
  2. Heat a non-stick pan over medium heat and lightly coat it with sesame oil.
  3. Pour the whisked eggs into the pan and swirl to create a thin layer.
  4. Add shredded carrot, zucchini, and chopped kimchi evenly over the egg.

Spiced Wholegrain Porridge

  • 1/2 cup amaranth seeds
  • 1 cup almond milk
  • 1 tablespoon almond butter
  • Mixed berries (blueberries, strawberries, raspberries)
  • Greek yoghurt
  • Cinnamon and cardamom to taste
  • 1/2 teaspoon vanilla extract


  1. Rinse amaranth seeds under cold water.
  2. In a saucepan, combine amaranth seeds and almond milk. Bring to a boil, then reduce heat to low and simmer until the porridge thickens.
  3. Stir in almond butter, cinnamon, cardamom, and vanilla extract.
  4. Transfer the porridge to a bowl and top with mixed berries and a dollop of Greek yoghurt.
