Beetroot Hummus with Crunchy Veggies

This Beetroot Hummus is not only visually stunning but also a flavourful and healthy option for dipping. Enjoy the vibrant colours and delicious taste!

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 2 small cooked beetroots, peeled and chopped
  • 2 cloves garlic, minced
  • 1/4 cup tahini
  • 1/4 cup fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional Decorative Toppings:
  • Extra virgin olive oil for drizzling
  • Chopped pistachios
  • Whole chickpeas
  • Chopped chives
  • Sesame seeds
  • Dipping Foods:
  • Cucumber strips
  • Carrot strips
  • Celery Strips
  • Pita bread, cut into wedges 

Instructions:

  1. In a food processor, combine chickpeas, beetroots, minced garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper.
  2. Blend the ingredients until smooth, scraping down the sides as needed. If the hummus is too thick, add a bit more olive oil or water until you reach your desired consistency.
  3. Taste and adjust the seasonings, adding more salt, pepper, or lemon juice as needed.
  4. Transfer the beetroot hummus to a serving bowl.
  5. Optional: Create decorative toppings by drizzling olive oil over the surface and sprinkling with chopped pistachios, whole chickpeas, chives, and sesame seeds.
  6. Serve the beetroot hummus with cucumber, celery and carrot strips, along with pita bread wedges for dipping.

Avocado and Smoked Salmon Sourdough Toast

This simple brekkie is bursting with flavour and nutrition, making it a go-to for those busy mornings.

Ingredients:

  • 2 slices whole grain sourdough bread, toasted
  • 1 ripe avocado, mashed
  • 100g smoked salmon
  • 1 tablespoon hemp seeds
  • Lemon zest and juice
  • Salt and pepper to taste

Instructions:

  1. Spread mashed avocado on toasted sourdough slices. Top with smoked salmon, hemp seeds, a sprinkle of lemon zest, and a squeeze of lemon juice. Season with salt and pepper for a satisfying breakfast.

Ginger Turmeric Rooibos Latte

Indulge in the comforting warmth of our Ginger Turmeric Rooibos Latte, a golden elixir that blends the earthy notes of rooibos tea with the warmth of ground turmeric and ginger.

Ingredients:

  • 2 cups brewed rooibos tea
  • 1 cup unsweetened almond milk (or any milk of your choice)
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger (or 1 teaspoon freshly grated ginger)
  • 1 tablespoon rice malt syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of black pepper (enhances turmeric absorption)
  • Optional: Cinnamon for garnish 

Instructions:

  1. Brew rooibos tea and set aside.
  2. In a saucepan, heat almond milk over medium heat. Add ground turmeric, ground ginger (or freshly grated ginger), rice malt syrup, vanilla extract, and a pinch of black pepper.
  3. Whisk the mixture until well combined and heated through. Do not bring it to a boil.
  4. Pour the brewed rooibos tea into your favourite mug.
  5. Pour the spiced almond milk mixture over the rooibos tea, stirring gently.
  6. Optional: Garnish with a sprinkle of cinnamon.
  7. Enjoy your soothing Ginger Turmeric Rooibos Latte!
