Vegetarian Laksa with Rice Noodles

Vegetarians rejoice! We're sharing a killer laksa recipe high in flavour and nutrition, but low in sugar. You'll love the fragrant spices and aromatic herbs, this dish is perfect for a family dinner.

Note: Look at the sugar content of your laksa paste. Look for one without sugar, but if it does contain sugar keep it under 4g/100g.

Paleo option: Substitute rice noodles for Konjac noodles or 1 large (200g) zucchini, sliced into noodles.
