If you are like us, you love a sneaky sausage roll every now and then! Well we wanted to adjust our much loved sausage roll recipe and add in as many “hidden” veggies as we could. This recipe is perfect for all those picky eaters.

10 sausage rolls (puffs)

250g Beef Mince
½ Large Red Bell Pepper
1 Large Carrot
2 Garlic Cloves
½ Large Onion, Diced
1 Roll Puff Pastry
1⁄2 tsp Thyme
1⁄2 tsp Smoked Paprika
1 tsp Pepper
1 tsp Salt
1 Egg, Whisked
Sesame Seeds (Optional)
In a pan add in your chopped veggies and sauté slightly over medium heat.
In a large bowl, add in your veggies, mince and spices and give it all a good mix.
Cut your puff pastry in half lengthways so you have two large rectangles and spread your filling along the centre then roll the puff pastry until the two ends meet, press down firmly to seal.
Cut your “snakes” into whatever size you would like, we went for puff/bite size, lightly brush with egg mixture and sprinkle with sesame seeds (Optional).
Place in the oven at 180°C/350°F for 25 minutes or until golden brown OR place in the airfryer at 180°C/350°F for 15 minutes .
Serve warm with a dip of your choice.
