A wholesome and easy meal you can whip together and throw in the oven!
1 Head of broccoli, cut into small florets
300g Chicken breasts, cut into bite size pieces
250g Pasta, penne or spiral
2 Cups of milk
1 Cup of shredded cheese
1 Cup of chicken broth
¼ Cup of flour
1 tsp thyme
1⁄2 tsp smoked paprika
1 tsp salt
1 tsp pepper
2 cloves garlic
Preheat oven to 200° OR 390°F.
Add all your spices to your chicken and coat completely.
Place uncooked pasta into your baking dish and add in milk, broth and garlic and stir.
Sprinkle flour over and mix very well.
Top with chicken and then broccoli, cover with foil and cook for 15-20 minutes.
Carefully remove from the oven, add in the majority of cheese mixture and stir well then top with remaining cheese.
Place back into the oven and bake for another 15-20 minutes until golden.
Remove from the oven and serve warm with a side salad.
For the cheese mixture we used cheddar and a semi-hard swiss cheese, however you can use whatever you have in your fridge!
