1½ cup Macaroni Pasta
1 tsp (5ml) Extra Virgin Olive Oil
1 Onion, diced
500g Chicken Mince
2 tbsp (40ml) Butter
1 cup (250ml) Milk
½ cup (125ml) Water
½ Lemon, juiced
2 tsp Dried Basil
1 tsp Salt
¼ tsp Nutmeg
1 Zucchini, grated
4 cups Spinach
½ cup Tasty Cheese, grated
Preheat oven to 180 degrees and prepare a baking dish.
Cook pasta according to packet instructions, drain and set aside.
Heat oil in a saucepan, add onion and cook until softened. Add mince and cook through. Add butter and allow to melt. Add milk, water, lemon, basil, salt and nutmeg, cook for a further two minutes. Add zucchini and spinach and cook until spinach has wilted. Stir through cheese.
Pour mixture into the baking dish and bake for 20–25 minutes.

Hey Lenna! The most common culprit for excess water is the zucchini, so we like to salt it beforehand to prevent that water seeping out into the dish! Here’s how: Sprinkle zucchini with salt, only a pinch or two. Drain in a colander with a dish beneath. Leave for 1 hour, then squeeze out the excess liquid with your hands.
A quicker method is to use a cheesecloth if you have one, and wrap your zucchini in it then squeeze that excess liquid out. Hopefully this should solve the excess water issue in your bake, let us know how you go! Happy cooking! xx The IQS Team
