1 cup rolled oats
1 cup pecans
1 cup buckwheat groaties
1 cup walnuts
2 tablespoons chia seeds
1 teaspoon cinnamon
1 teaspoon vanilla powder
1/4 teaspoon of salt
1/4 cup almond or almond butter
1 large ripe banana, mashed (about 1/2 cup)
1/4 cup coconut oil
Preheat oven to 180°C/350°F/gas 4 and line a large baking tray with baking paper.
Add all ingredients to a large mixing bowl. Using a wooden spoon, mix all ingredients until everything is nicely coated. Scoop onto the prepared baking tray and roughly flatten out. You still want to leave a few large chunky pieces.
Place in the oven and cook for 20 minutes, turning halfway. Once nicely browned, remove granola from the oven and allow to cook completely, this will make your clusters hold together better.
