Creamy Choc Mint Smoothie
1 cup cauliflower stems, frozen
1/2 zucchini, frozen
1/3 cup raw cashews, soaked in water for at least 30 minutes
1/4 cup mint, fresh, leaves picked.
1 1/4 cup almond milk.
2 tablespoons raw cacao powder.
2 tablespoons protein powder, chocolate or vanilla.
1 tablespoon raw cacao nibs.
1 tablespoon coconut flakes, to serve
Place all ingredients (except for the raw cacao nibs and coconut flakes) in a high-speed blender and blitz on high until smooth. Pour into a jar or glass to serve and top with cacao nibs and coconut flakes.
