Hi, do I have to use 12 eggs. Is there an alternative. My kids might think they are a little eggy.
Cheers Tanya

These energy meffins - meat muffins - are gluten free, paleo, sugar free and delicious! Have one meffin for breakfast or serve with a big salad for lunch.
Coconut oil, butter or ghee, for greasing.
500g minced pork or beef.
1 cup chopped leftover or Par-Cooked-and-Frozen Veggies.
12 eggs.
225g cottage cheese.
Several tablespoons chopped herbs (I use sage and thyme) and/or 2 tsp dried herbs and spices (I like nutmeg)..
Handful grated cheddar cheese.
Preheat the oven to 180ºC / 350ºF and lightly grease a 12-cup muffin tray.
Brown the mince in a frying pan with a little oil. When cooked, add in the veggies and cook until just soft.
Beat the eggs in a bowl, then add the meat, veggies, cottage cheese, herbs and spices.
Spoon into the muffin tray and sprinkle with the grated cheese. Cook for 15-20 minutes. Best served warm.

Hey Tanya! The eggs are essential in this recipe to create that crispy texture, but we’ve got another recipe for you that just uses 3 eggs and is less egg-centred that your kids will love: https://iquitsugar.com/blogs/recipes/cheesy-garlic-bread-muffins
