These little morsels have everything you need in one; low fructose fruit, good fat and chocolate.
Tick, tick, tick!
1 1/4 cups unsweetened shredded coconut
1 tablespoon rice malt syrup
1 tablespoon coconut oil, melted
1 1/2 tablespoons coconut milk
1 teaspoon vanilla powder or extract, optional
1/2 cup raspberries (fresh or frozen)
1 cup Basic Raw Chocolate or 1 cup store-bought (85% dark) chocolate
Line a baking tray with baking paper. Add all the filling ingredients to the food processor. Pulse until mixture comes together but still has texture. Roll tablespoons of the mixture into round balls, place on a baking tray and freeze for at least an hour.
Meanwhile make Basic Raw Chocolate or melt store-bought chocolate over a double boiler being careful not to seize the chocolate. Remove the coconut balls from the freezer and roll them in the melted chocolate so they are completely coated.
Place balls on a tray and sit in the fridge to set before serving.
Tip: These balls will last better in the fridge.

Hey Nola, absolutely, we love using rice malt syrup for a gentle flavour that doesn’t leave an aftertaste! You may also like to try monk fruit sweetener as it’s free from fructose. Enjoy!

Is there any other sweetener you can use besides stevia- I absolutely hate the left over taste it leaves…

Hi Kerry, where are you located? If you’re in Australia, your local healthfood store should stock vanilla powder (vanilla bean powder), one store called The Source Bulk Foods sell it, and you may find it in QE Foodstores as they stock Herbies, a brand which produces vanilla powder. If your local healthfood store or supermarket doesn’t stock it, going online could be the best course of action: try Wheat Free World: https://wheatfreeworld.com.au/product/natural-vanilla-powder-3/ or Mountain Wholefoods: https://mountainwholefoods.com.au/products/gourmet-essentials-100-pure-vanilla-bean-powder-15g?pos=4&psq=vanilla%20bean&ss=e&v=1.0
Or you could try Amazon if you can’t access these from your location. Happy baking!!
