2 cups of unsweetened coconut milk (or any milk of your choice)
1 teaspoon of pure vanilla extract
2 teaspoons of unflavoured collagen powder (marine or bovine, as per your preference)
2 teaspoons of agar-agar powder (a plant-based alternative to gelatin)
1 cup of mixed berries (strawberries, blueberries, raspberries)
In a saucepan, whisk together the coconut milk, and vanilla extract. Warm the mixture over medium heat until it's steaming but not boiling.
Sprinkle the collagen powder and agar-agar powder over the warmed mixture while whisking continuously. Continue to heat and whisk for about 5-7 minutes, or until the powders are completely dissolved, and the mixture begins to thicken slightly.
Remove the saucepan from the heat and let it cool for a few minutes.
Pour the mixture into your preferred panna cotta moulds or serving glasses.
Allow the panna cotta to cool to room temperature, then cover and refrigerate for at least 4 hours or until it's set.
Once the panna cotta has set, spoon the berries over the top.
Serve your Healthy Collagen Panna Cotta chilled and enjoy!
