This refreshing salad is bursting with summery flavours like peach and rocket, with the creamy addition of feta paired with that nutty quinoa to give it a flavour-boost.
Dairy-free option: Omit feta.
If peaches aren't in season where you live, replace them with a small green pear or Lebanese cucumber.
Lentil, Quinoa and Peach Salad
1yellow peach, stone removed, cut into 8 wedges
2 cups rocket leaves
1 cup Cooked Quinoa, defrosted
1 cup Cooked Lentils, defrosted
1small avocado, cut into cubes
1/2 cup pecans
- 80 g feta, crumbled
2 tablespoons olive oil
- 1 teaspoon Dijon mustard
Combine all salad ingredients in a large salad bowl.
To make dressing, whisk ingredients in a small bowl or jar until well combined.
Serve half the salad for dinner drizzled with half of the dressing. Place remaining salad and dressing in the fridge for lunch tomorrow.
