This slice is packed with gut-boosting ingredients, from yoghurt to herbs, olive oil and eggs. It’s delicious hot or cold, making it the perfect on-the-go meal.
1 onion, finely chopped
1 zucchini, grated
1 clove garlic, minced
1 carrot, finely grated
40 g crumbled feta cheese
1/4 cup chopped fresh parsley
30 g grated Parmesan cheese
1/4 cup olive oil
4 large eggs, lightly beaten
1/2 cup all-purpose flour (or almond flour for a gluten-free version)
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Greek yoghurt, to serve
Preheat your oven to 190°C (375°F). Grease a 20x20 cm baking dish and set aside. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini to remove as much liquid as possible.
In a large bowl, combine the zucchini, onion, garlic, crumbled feta cheese, carrot, parsley, grated Parmesan cheese, olive oil, and beaten eggs. Mix well to combine.
In a separate bowl, whisk together the all-purpose flour (or almond flour), baking powder, salt, and black pepper.
Add the dry ingredients to the zucchini mixture and stir until everything is evenly combined.
Pour the mixture into the prepared baking dish and spread it out evenly. Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and the slice is set in the centre. Remove from the oven and allow it to cool slightly before slicing into squares or rectangles.
Serve the Mediterranean zucchini slice warm or at room temperature now, and save the rest of the slice in a container in the fridge to be enjoyed later. Serve with a tablespoon or two of Greek yoghurt.

Hey Sally! Great question – if you’re cooking double the amount in a double sized dish, decrease the temperature by approximately 15 to 25 degrees © and increase the cooking time – it will vary depending on your oven and dish size, but keep an eye out for when it starts to get golden brown on top – keep checking doneness at the time indicated by the original recipe, then every 5 minutes following until the recipe is evenly cooked or baked. If you’re cooking double the amount in separate dishes increase the temperature by approximately 25 degrees c and again check doneness at the time indicated by your original recipe, then every 5 minutes following until the recipe is evenly cooked or baked.
