The maca and vanilla combo gives this mug cake an undeniable caramel flavour, while the nectarine provides natural sweetness, making this the ultimate dessert-styled breakfast (but without any added sweetener!).
1/2 cup of almond meal
1/4 teaspoon baking powder
1/2 teaspoon chia seeds, plus more to sprinkle
1/2 teaspoon maca powder
1/4 teaspoon vanilla powder
1/4 nectarine cut into four wedges
1/4 cup of milk of your choice (full-fat, almond or coconut)
1 tablespoon full-fat natural yoghurt, to serve
Add almond meal, baking powder, chia, maca and vanilla to a microwave-safe porcelain mug and mix with a spoon. Add in the milk and stir until smooth. Push the nectarine wedges into the mixture.
Microwave on high for 1 minute and 30 seconds. Serve with a dollop of full-fat natural yoghurt and a sprinkle of chia seeds.
If nectarines aren’t in season where you are, replace with some chopped pear or apple.
