1 cup wholemeal self raising flour
1 cup milk
1-3 teaspoons of rice malt syrup
1 cup of chopped walnuts
1/2 grated pear or apple
3/4 cup of shredded coconut
1/4 cup frozen mixed berries
Preheat oven to 180*C and line a loaf tin with baking paper.
Add all ingredients, except berries in a bowl and combine. Add berries and gently fold into mixture.
Pour batter into the prepared tin and bake for 40-50 minutes, It might seem a bit gooey if you cut into it straight out of the oven, but once cooled, it will become firm. Slice and serve on its own or with a smear of butter.

Hey Claire, yes that will work well! A good rule of thumb is 1/3 cup of coconut flour for every cup of flour, and for a better result you may want to add 1 teaspoon baking powder, ½ teaspoon salt, and ¼ teaspoon baking soda rather than just the baking powder. Let us know how you go! xx The IQS Team

Hey Diane! This will keep for 3-5 days in the fridge and up to 3 months in the freezer. You can use tablespoons, but if you prefer a little less sweetness, teaspoons will work too, it really depends on your desired level of sweetness. Let us know how you go! xx The IQS Team

Hey Liz! It will depend on how thick you cut your slices, but this loaf should yield 8-10 slices, and the whole loaf has around 2000 calories, making one serve around 200 calories (give or take depending on your slice thickness.)
